About this deal

Once you’re happy with how well the tofu is seasoned (you can leave it for longer than 10 mins, if you desire more flavor), it’s time to remove the aburaage from the pot again.

This has a little historical footing in that when the dish was originally created in this form, the rice was added to thank Inari for such a wonderful and prosperous harvest. Inari sushi is also known in Japan as ‘Inarizushi,’ and while it’s a simple sushi dish to prepare, it’s also one of the most ancient and deep-rooted dishes in the country. After the tofu pockets absorb all the flavors, we squeeze them to remove the liquid and get them ready to stuff with sushi rice. Please refer to Sanshoku Bento (Tri-coloured Rice Bowl) for how to make seasoned pork mince and iri tamago. At one time, some temples were home to live foxes that were venerated, but this is not current practice. Use a large bowl (I use a sushi oke or hangiri here) or a baking sheet to cool and season the cooked rice. Sometimes, the inari sushi is inverted, so that the opening sits at the top of the triangle, exposing the rice from a birds-eye point of view.

Just for laughs, I thought I would make them look like cute little pandas and fish although I doubt that I will go to the trouble on a school morning. The Sushi Chef I worked with used to make this with rice but also included red bean paste or sesame seeds. In some parts of Kyūshū, a festival or praying period begins five days before the full moon in November; occasionally it is extended to a full week. Here, I used sliced cucumber, ikura (salmon roe), shredded egg crepe (kinshi tamago), boiled shrimp, and cooked salmon flakes. She [Inari] descended from Heaven riding on a white fox, and in her hand she carried sheaves of cereal or grain. Essentially, it comprises a tofu pocket that has been cooked in dashi broth to absorb the flavor, before being squeezed (to remove excess liquid) and stuff with sushi rice. I did use a candy thermometer, but it was hard to regulate the heat properly, and I have a gas stove.

Alternatively, you can put it in a saucepan and bring it to a boil over medium-high heat and whisk to dissolve the sugar. Now it’s simmering, I can’t wait to try the inari sushi rice thing tomorrow 😄 thank you as always fot your recipe! Combine 4 Tbsp rice vinegar (unseasoned), 2 Tbsp sugar, and 1 tsp Diamond Crystal kosher salt in a small bowl. The first recorded use of the present-day kanji ( characters) of Inari's name, which mean "carrying rice", (literally "rice load") was in the Ruijū Kokushi in 892 AD. This is sometimes referred to as bag-shaped, as though a sack of rice has been opened, and is a little misshapen, thanks to the redistribution of the rice. Boil the aburaage: This helps remove excess oil and any residual fried or freezer flavours and scents. Then place the aburaage pieces between the palm of your two hands and squeeze as much of the excess water out.
