Make the frosting: In a large bowl using a handheld or stand mixer fitted with a whisk attachment, beat the butter on high speed until completely smooth and creamy, about 2-3 minutes. Add the confectioners’ sugar, beating on low at first then increasing to high speed. Once creamy and combined, beat in 2 Tablespoons of reduced Guinness, the espresso powder, vanilla extract, and salt. Taste. Add the remaining reduced Guinness if needed. If you want the frosting a little thinner, add a splash of milk.

A perfect treat for those who are trying to cut down on the real thing, these mini pints will be a hit with whoever you serve them to. And you can’t argue with the fact they look cool. I mean, come on, a mini chocolate Guinness. What’s not to like? The rest of the brownie ingredients are usual suspects. Butter, sugar, eggs, flour. Instead of cocoa powder, we’re using pure solid chocolate. Sometimes I use a combination of pure chocolate AND cocoa powder in homemade brownies, but I wanted to keep things really simple since we’re taking extra time to reduce beer on the stove.In a medium saucepan, bring the beer to a boil on medium/high heat. Boil for 20-25 minutes or until the liquid is reduced to 1/4 cup. Preheat the oven to gas mark 4/180°C/160°C Fan/350ºF, and butter and line a 23cm / 9 inch springform tin.

Let set: Cover the pan with plastic wrap and refrigerate the fudge until set; it will take at least 5 hours. I usually leave it overnight. When you add ‘random’ ingredients to a sponge, it can create the most wonderful texture. Mayonnaise cake works as mayonnaise is essentially just eggs and oil, so ingredients you often find in a cake anyway! Courgette can bring a level of moisture… Guinness brings all of it. It creates a delicious sponge that I adore.Then spread the mixture evenly onto a parchment paper lined 8″ x 8″ pan or glass dish (make sure the paper hangs over two ends of the pan so you can use it as a handle to remove the fudge when done). Place the container in the fridge and chill until set (about 2 hours). The salty pretzels are great addition to the fudge. Not only do you get that sweet-salty combo, pretzels are a great pairing with beer. I like the way each piece has its own pretzel, but you could crush them up and mix them in or use crushed up pretzels on top if you didn’t have enough whole pretzels. Either way, it will be delicious. This amazing Bailey’s fudge recipe is made with only four ingredients and is one of the best treats you can imagine. Two sorts of chocolate – semisweet and dark, sweetened condensed milk and Bailey’s Irish Cream come together to create a homemade fudge that’s bursting with flavor. As I often do these days, I use light brown soft sugar in my chocolate cakes because I love the flavour that it makes. You can use caster sugar if you want, or if it’s what you have though – or even dark brown soft sugar for an even deeper flavour. The Guinness does bring a flavour itself though, so make sure to remember that. The mixture for this chocolate Guinness cake is quite runny once made, but trust me, it’s meant to be. Split the mixture evenly between two lined tins, and bake until beautiful. Make sure to cool the cakes fully before going anywhere near the decoration as otherwise the frosting will melt off almost straight away! And no-one wants that. Frosting decoration
