About this deal

Soybeans and foods derived from them have been part of the human diet for centuries. Nevertheless, some people worry about including soy in their diet due to the following areas of concern:

In addition, minimally processed soy foods, such as soybeans, tofu, tempeh, and edamame, appear to improve cholesterol levels more than processed soy products and supplements ( 13). May help protect heart health Strain the beans and add them to a heavy pot with 2 cups of water. Cook for 15 minutes over medium high heat, uncovered. Then cover and simmer for another 5 minutes over low heat. Note 4 - Kosher salt: you can omit the additional salt if you don't enjoy a lot of salt in your food. The soy sauces are strong and salty, so again, less is more! The sauce for these noodles is based around soy sauce. But here’s the thing – you can’t use only soy for a good noodle sauce! Soy-only sauces are one-dimensional and bland. Instead we’re also using a handful of staple Asian sauces here to add depth and character. Ready-to-use sauces like these also minimises the list of ingredients while still delivering big on flavour!

For instance, one recent review suggests that a median intake of 25 grams of soy protein per day may help reduce total and LDL (bad) cholesterol levels by around 3% ( 14). Some studies suggest both may benefit, while others suggest only people with high blood pressure would experience this effect ( 22, 23). However, it’s unclear whether these small blood-pressure-lowering benefits apply to people with normal and elevated blood pressure levels.Note 3 - Fish sauce: the flavour mellows with this one in the wok. It is not 'too fishy'. Try it as it brings a unique Asian taste to the dish. For a variety of reasons, it is common to cook beans from scratch, including soybeans. Soy can be cooked in a variety of ways, including stovetop cooking, pressure cooking, and slow cooking. Cook soy in a 1:3 ratio with water. It’s possible that you’ll need to wait up to four hours to make sure your soybeans are fully cooked. Pressure cookers are excellent for cooking dried beans. Soak your dried soybeans in a pressure cooker before cooking them in the cooker. Put about four cups of water in your slow cooker for each cup of soybeans. Cook on high for 6 to 8 hours, or on low for 20 minutes to an hour. Peanut oil: an aromatic oil that is excellent to use in Asian recipes. It is much lighter in colour than olive oil and has a very fragrant taste about it. Soy sauces– The dominant flavour in this sauce, I’m using a combination of dark and light soy sauce here. Together they deliver the flavour and colour I am aiming for. Dark soy sauce has a more intense flavour and stains the noodles a beautiful mahogany colour you can see in the photo below. The light soy sauce adds extra savour without too much colour so the sauce doesn’t get too dark. See recipe notes for how to switch these out, and more on different soy sauces here!
